Cattails are also known as “Pu Huang” in TCM (Traditional Chinese Medicine). Although they have many uses and benefits, they are underestimated today. They make for a perfect survival food. The stalks are said to be a tasty snack and when cooked, the flowers, which are the fluffy brown part many identify the plant by, are also delicious. The pollen can be used as a gluten-free flour.
